At this restaurant, which opened in 1984, the Vidal family serve up a delicious repertoire of dishes that are an intelligent take on tradition: tasty dishes that shine a light on small-scale local producers (of, for example, Noire du Velay lamb, AOP Fin Gras du Mézenc beef). Aurélien's pâté en croûte is quite a technical feat and deserves a special mention. For hearty but simpler fare, head next door to Le Bistrot de Justin, which is only open for weekday lunch. Excellent value for money.
