Having obtained the rights to public weighing and the cheese market, Edam began to develop the cheese trade for which it is famous. This ended with the introduction of industrial production in 1922, although traditional methods have been reintroduced in recent years. The Kaasmarkt square is also home to the Kaaswaag (cheese weigh house).
