The Michelin Guide's review
The Counts of Holland chose the banks of this lake as their residence. A small island planted with trees emerges from the lake where domesticated swans once lived (these fish-loving birds were useful for cleaning the market square of rubbish which had fallen off its stalls). Considered harbingers of prosperity, they appear on the city's coat-of-arms.
