Suwa Izumi sake brewery was created in 1859 and is one of the few places that sells the famous "daiginjo-shu" sake. First the rice is polished to more than 50%, then very soft water from the Sendai River is added, it is soaked, steamed and yeast is added to start the delicate fermentation process. After that it is pressed, aged, bottled and finally it is time to taste this divine nectar, so soft on the palate and so heady in flavour.
