The name is a clue as to this intimate restaurant’s focus, as well as to its sustainable ethos. Fish comes from small boats, meats are reared putting husbandry first and game is from local shoots. All parts of the ingredients are used too, so that the constantly evolving menu produces little waste. Dishes are ambitious and the self-taught chef shows great skill in cooking fish in particular, while friendly service enhances the all-round experience.
