The owner-chef was born the son of a tonkatsu shop-owner. His preferences in pork are for tender meat and sweet fat. Seeking texture and fragrance, he batters his pork in coarse breadcrumbs. The generous heaps of cabbage are fresh and vibrant, while the plain black crockery frames the tonkatsu majestically. Chicken-katsu is also available. Enjoy with salt, soy sauce or Worcestershire sauce.
