Finally a place to call their own! Pastry chef Camille Pailleau and chef Diego Delbecq have channelled all their energy and talent into this former printing works, turning it into a loft-style restaurant, with tables set out beneath the vast glass roof and its metal beams. Lovely parquet flooring, pale walls, large kitchens separated from the dining area by glass panes: the impeccable design ensures plenty of atmosphere. Here, the chef cooks up tasty modern cuisine with a penchant for sauces, as well as citrus and bitter notes, condiments and peppers – plus the obligatory nods to this region (eg chicory, tarte au sucre). How about monkfish, Koshihikari rice, basil and green chilli? Their two signature dishes are present and correct: a mushroom medley and a heather honey dessert.
