This restaurant opened by an experienced Franco-Philippine couple (he’s in charge of savoury dishes, while she rustles up desserts) specialises in Gallic cuisine influenced by the flavours and odours of this archipelago of 7,107 islands (so it is said)… The food takes you on a culinary tour between Sarthe and the Philippines: scallops, citrus fruit, cabbage and espuma of bloody orange and kalamansi or plump poultry, sweet potatoes, banana avocado. Even if the restaurant’s roof isn’t covered in palm leaves (meaning of nipa), the modern dining room which mixes materials and references (wood, mother-of-pearl, coconut and metal) is delightful.
