It might have been more accurate to call this restaurant "Le Tapis Vert", given the green philosophy that underpins its sustainable culinary offering. Located in the time-honoured Grandhotel Giessbach (built in 1875) – right at the foot of the waterfalls of the same name, it boasts a wonderful view of Lake Brienz. Soak up the atmosphere as you enjoy refined modern cuisine that is created primarily using ingredients from the establishment's 2ha vegetable garden. Produce that is not immediately used is pickled, fermented or marinated. The restaurant's own home-grown ingredients are supplemented by local farms and small-scale producers. A vegetable-focused set menu and a completely vegetarian set menu are served. Dishes such as ancient spelt risotto with wonderfully aromatic and fresh vegetables and Tschingelfeld Alpine cheese hide behind names such as "Our Garden Vegetables".
