First things first: make sure you have some time to play with! Stefan Glantschnig and his team take you on a culinary journey around and through the Weissensee region. In a tasting menu comprising 12 beautifully coordinated, creative courses, top-notch ingredients from the immediate vicinity are showcased through exciting flavour combinations. The Chef's Table, limited to eight diners, is not in the kitchen but in a private room on the first floor of the Neusacherhof hotel. With its decorative display of cookbooks, the space feels almost like a small library, and the atmosphere is wonderfully intimate – enhanced by the signature red and black accents that echo the name Rouge Noir. A large window affords a sensational view of Lake Weissensee and the surrounding meadows and mountains. Service with a personal touch comes courtesy of chef-patron Stefan Glantschnig and his charming wife. He serves and explains the dishes himself, and she also recommends interesting wine pairings or excellent alcohol-free alternatives. Even the local fisherman is on hand in the evening to share insights about whitefish, lake trout and other local catches. A lovely touch: The evening begins with a portion of freshly made popcorn and champagne.
