In the heart of Trieste’s historic centre, the grand halls of the former Palazzo della Borsa now house the sophisticated dining concept created by Matteo Metullio and Davide De Pra. The elegant, contemporary setting retains a precious link to the past in the original motifs decorating the window panes – the one historical feature that has been carefully restored. The undisputed star of the show is the spectacular open kitchen – a veritable theatre of haute cuisine – which offers an immersive experience to guests seated at tables overlooking the kitchen team and, even more so, to those who choose a seat at the counter.The menu is structured around various tasting menus that highlight the technique, balance and identity of the ingredients, which are easily recognisable and showcased in their purest form. One of the standout items on the menu is the selection dedicated to the sea and the spirit of Trieste, featuring dishes such as cold spaghettino with beetroot, lemon ponzu, yuzu mayonnaise and tuna tartare with chives. Alongside this, there are menus that explore the combination of meat and fish, as well as a selection of the restaurant’s great classics, including the iconic Harrysotto. Whichever path they choose, Metullio and De Pra’s cuisine continues to rank among the most brilliant, innovative and captivating on the Italian gastronomic scene.
