The Michelin Guide's review
Just a few kilometres from Acquapendente, a historic stop on the Via Francigena, the restaurant enjoys a peaceful and scenic location, overlooking the Tuscia countryside. Here, Iside De Cesare and Romano Gordini offer cuisine deeply rooted in the region, based on local produce and authentic flavours, enhanced by a subtle technical finesse. Examples include dishes such as chilled chickpea hummus with local extra virgin olive oil, or the lentil ‘caviar’ that kicks off the dining experience. Among the most typical dishes, the tender and succulent pigeon – when available – stands out, served with bruschetta topped with chicken liver ragù and a canederlo in broth. Rounding off the experience are a well-stocked wine cellar, featuring a range of mature vintages, and the pleasant terraces, which are ideal for enjoying the tranquillity of the surrounding countryside.
