Once seated, guests may choose from four tasting menus crafted by Alessandro Scardina (all available à la carte): Radici, rooted in Piedmontese tradition; the pared-back Essenziali; the vegetarian Botanic World; the creative Zero/100 Km/h; or Trust, a blind journey guided by the chef’s sensitivity.
