Set in a peaceful location outside the city, the Kavalier wing of Hohenheim Palace is a destination for sophisticated cuisine. This is thanks in no small part to Stefan Gschwendtner, whose precisely executed, intelligently constructed and expressive dishes keep pace with the times without bowing to culinary trends. His distinctive style comes through beautifully in the perfectly seared Dutch pike-perch, topped with a wafer-thin layer of lardo and served with aromatic, lightly flame-seared peas, fresh, lightly marinated mustard greens, a little tarragon oil and elderflower foam. The result is a wonderful balance of delicately savoury and sweet notes. Diners can opt for the six- or seven-course set menu. Friendly and highly professional, the front-of-house team is on hand with expert wine recommendations, and alcohol-free pairings are also available to go with the set menu.
