In a tiny village at the foot of Mount Amiata, chef-patron Roberto Rossi captivates his guests within elegant and relaxed settings, offering decidedly Tuscan cuisine meticulously prepared, consolidating classic cooking techniques that reveal the fragrant flavour of prime materials. Moreover, when in season, the chef’s own garden plays a principal role in the menu (it’s a pleasure to visit and admire its “design”): excellent pigeon ravioli, alongside bread—which is among the chef’s passions—and a steadfast presence of fish dishes. The entire menu is seasoned with the chef's own Evo oil produced using olives from Seggiano.
