It was in this handsome 17C mansion that Charles Gounod played the first bars of his opera, Mireille, to Frédéric Mistral, author of the poem that inspired the libretto. Nowadays, the space with exposed stone walls is home to an intimate and convivial chef's table orchestrated by young chef Quentin Lailler. His Provençal-inspired menu is prepared in the open kitchen. The meal begins with lively creations, such as a bright and fresh tartare of squilla mantis, and a new take on pissaladière with sardines and tapioca chips topped with marinated Camargue bull. The elegant dishes keep coming: Mediterranean mackerel seasoned with a horseradish sauce and a ground ivy emulsion, grilled leek with fig oil and hay sabayon, and trout from Isle-sur-la-Sorgue accompanied by an acacia flower beurre blanc. The rooftop terrace affording relaxed dining with views over the village rooftops is a bonus.
