In the heart of Trastevere, a recent interior refurbishment has given the Osteria della Trippa a new look, while retaining its rustic, homely character. The cuisine passionately celebrates the traditions of Rome and the Lazio region, offering generous, meticulously prepared dishes, with a particular focus on offal. The undisputed star of the show is, of course, tripe, served in a variety of ways and featuring as the centrepiece of a dedicated tasting menu; another menu, meanwhile, pays tribute to the cuisine of Viterbo. There’s no shortage of the great classics, from artichokes alla giudia to coratella, right through to pasta dishes with the most famous sauces: amatriciana, carbonara, cacio e pepe and pajata. Rounding off the experience is the warm welcome from Alessandra Ruggeri, the heart and soul of the dining room, and a wine list with a focus on wines from Lazio and across Italy.
