The first thing to strike you in this unpretentious bistro in the Lavapiés district, just a few steps from the Antón Martín market, is the close working relationship between the couple at the helm, namely Patricia in the dining room and British-born chef Aaron in the kitchen. The latter showcases his market-inspired cuisine with the occasional nod to his homeland (e.g. the “Hash Brown”, chorizo; salmon, ajoblanco, spicy radish, etc), on a concise menu that changes every three months. “Bolboreta” is the Galician word for “butterfly”, and is a reference to the chef’s grandmother, who loved these particular insects.
