His cuisine, deeply rooted in the island, eschews any stylistic flourishes for their own sake, focusing instead on the essence of the ingredients and the memory of flavours, reinterpreted with extraordinary contemporary sensitivity. Examples include dishes such as pasta with a shellfish broth or Nebrodi black suckling pig with Sunday sauce. The two dining rooms, modern and minimalist, create an elegant and relaxed atmosphere, while the service, led by Vincenzo and his close-knit team, stands out for its professionalism, experience and genuine hospitality. The wine list is also of particular interest, featuring a carefully curated selection of wines and numerous large-format bottles, among which many outstanding Sicilian wines stand out – wines that, in the glass, reflect the very same regional identity that inspires the cuisine.
