Pajtim Bajrami makes no bones about his single-minded passion for fine ingredients, as the deluxe langoustines, wagyu beef and other delicacies quickly demonstrate. Polished French classics are right up his street, enhanced by gutsy sauces and the odd Asian tinge. An example: shellfish in a frothy bisque of coral roe and langoustine heads. A knock-out wine list and Ardita’s friendly, professional service add the final flourish.
