Denmark’s oldest castle sits within a UNESCO Geopark, whose undulating landscape was carved out during the Ice Age. In 1937 the castle was transformed into a hotel and restaurant, and today it continues in this vocation, while offering great respect for both its history and the surrounding region. The seasonal multi-course menu is entitled ‘Time and Place’. ‘Time’ is evident in the atmospheric room, where thick whitewashed walls are broken up by huge glass-fronted wine rooms. ‘Place’ comes in the form of produce from the nearby fields, forests and seas, which features in carefully crafted, innovative and intensely flavoured dishes.
