The fabulous estate of Schloss Schauenstein is home to another of Andreas Caminada's restaurants. The name "Oz" is derived from the Rhaeto-Romanic word for "today", a nod to the contemporary cuisine served here. Seasonal ingredients – either from the restaurant's own permaculture garden or sourced from long-standing partners – are creatively transformed by chef Simeon Nikolov into a nine-course set menu. You certainly won't miss meat in these subtle vegetarian dishes packed with flavour and delicate contrasts. One simply fantastic example would be the sautéed local mushrooms with beautiful roasted notes arranged on freshly baked puff pastry, decorated with deep-fried celeriac straws and served with aromatic mushroom foam. From seats at the U-shaped counter, diners can see the chefs at work – and even strike up a conversation. Incidentally, a donation of two Swiss Francs for the next generation of chefs is included in the price of every menu.
