Tōya? A famous volcanic lake in northern Japan, in the heart of Shikotsu-Tōya National Park. In the eyes of globetrotting chef Loïc Villemin, this region is something of a gastronomic paradise. Fish, wild plants, and herbs abound, while extensive livestock farming and high-quality market gardening are practiced here. Enough to inspire this Zen restaurant (overlooking a green golf course) with its trendy, natural feel! Our aspiring Buddhist monk has retreated to the best gourmet monasteries, those of Jean-Georges Klein, Nicolas Le Bec, Bernard Loiseau, and Arnaud Lallement. He loves working with beautiful products through a mystery menu that changes every week. His cutting-edge technique and creativity are expressed with strength and flavor in compositions that are generously proportioned. Not to be missed.
