Inspired by the arty Left Bank of Paris, this dining room is modern and chic. Gallic techniques and recipes hold no secrets for the seasoned head chef from Hong Kong and the six-course tasting menu is a great way to experience his culinary vision. Deceptively simple at first glance, each dish features complex flavours and textures, as well as bold Chinese twists – such as butter flavoured fermented bean curd or longjing tea panna cotta.
