The character of this medieval mansion has been intelligently enhanced by the cosy, trendy revamp. Niki shares his know-how in terms of choice of excellent natural wines to pair with the modern French recipes crafted by Koen. The chef sprinkles his cooking with the occasional unexpected note in a bid to further highlight the ingredients’ authentic flavours. Examples include saddle of lamb cooked in butter with suave, flavoursome side dishes based on wild garlic. A word of warning: à la carte only at lunchtime and set menu only in the evening.
